Tassis brings new perspective to Queensland dining with bridge-top restaurant opening February 20

Wednesday 19 February, 2025 – One of Brisbane’s most anticipated restaurant openings of 2025 will debut this week, with Stilts Dining opening February 20 atop the Brisbane City Council’s new Kangaroo Point Bridge. 

The modern Australian venue by Tassis Group will make history as Queensland’s first restaurant on a bridge, offering world-class dining and a new vantage point to experience Brisbane City.

Hospitality powerhouse and renowned restaurateur Michael Tassis says, “Stilts is more than just a restaurant – it’s a destination in itself, where guests can experience first-hand the things that make our city so unique. I wanted to create a place where every last detail celebrated the spirit of our community, from the people, culture and lifestyle, to our access to some absolutely incredible produce”.

In partnership with the acclaimed Allo Creative and Clui Design teams, Stilts brings this vision to life by paying homage to the architecture of traditional "Queenslander" homes, perched high upon the river and awarding 180-degree views of iconic Brisbane landmarks including the Story Bridge, City Botanical Gardens and Kangaroo Point Cliffs.

The scene for elegant dining is set with a moody, yet understated fit-out that complements the venue’s panoramic vista and enables Brisbane’s vibrant cityscape to shine. Think grey textured tiles, sandy beige seating, marble table tops and floor-to-ceiling windows fitted with sheer silver curtains.

The concept is one-of-a-kind, and Stilts has all the earmarks of doubling as a premier dining and tourism destination too, including:

  • Capacity to host up to 100-guests across three key spaces – a breezy alfresco balcony, a light-filled indoor dining room, plus a casual bar area.

  • A private dining room with capacity to host up to 12 guests, perfect for intimate celebrations or corporate meetings.

  • Brisbane’s first live Moreton Bay Bug tank, as well as Tassis Group’s signature live lobster and oyster tanks, and a dry-aging meat cabinet too.

The menu will be just as much a celebration of location as the venue itself, helmed by Head Chef Dan Hernandez (previously of Fosh Portside, Restaurant Dan Arnold and Agnes) and with a keen focus on premium quality meats, unmistakably fresh seafood and exceptional local produce. Top menu recommendations include the Australian Wagyu Flat Iron served with organic pea purée and a handmade wagyu beef dumpling, an up-market interpretation of the Aussie ‘surf and turf’ featuring a 28-day aged sirloin and swordfish steak, as well as a dedicated live seafood and caviar menu.

In every sense, Stilts will offer an elevated dining experience, but in true Tassis form it will still share the same warmth and approachability of its sister venues, including the recently opened Mulga Bill’s, hatted Fatcow on James St, Longwang, Rich & Rare, as well as Dark Shepherd and Pompette at The Star Brisbane, among others.

Leading the signature Tassis hospitality flow is venue manager John O’Brien, who brings two decades of hospitality expertise and a global perspective to the role. Passionate about nurturing memorable dining moments, O’Brien sees his new role as a privilege to operate such a landmark venue at the heart of Brisbane’s rapidly evolving culinary scene.

O’Brien’s efforts will be supported by assistant venue manager Rory Lundin, who shares an equally impressive skillset that will be instrumental in shaping the Stilts guest experience.

Of course, the entire experience can be excellently paired with a sizable beverage list which Tassis describes as ‘easy, breezy and appealing to all palates‘. Housed within a stunning maroon leather menu cover, guests will be spoiled for choice with a wine list containing over 180 drops, plus the usual selection of beers, spirits, and non-alcoholic options too.
